在南宋就享誉江南的一道菜------西湖醋鱼
做法:1.把草鱼剁成块状。2.加入橄榄油。3.放入生姜煸炒,然后放入鱼块。不用煸炒。4.加入料酒。5.放入老抽。6.加入清水煮开。7.加入白糖,然后勾芡。8.最后放醋开大火稍微烧一下加入鸡精撒上葱花就可以出锅了。(我倒的可是人
家镇江的名醋啊哈哈)
传统的西湖醋鱼是把整条鱼放入清水里加上葱姜煮熟然后再单独准备欠汁浇在鱼上,我觉得我这样做一来省时,二来鱼肉更加入味好吃。不过这里注意的是西湖醋鱼事先不用油炸的,这也是我喜欢的原因,肉一油炸,热量就会提高,营养就大打折扣了。
醋要放的晚点,太早放的话醋的香味会挥发掉的,所以到最后放稍微烧一会就可以了。
吃起来和楼外楼的真的没有什么两样,人家用的是整条鱼,样子可能更好看,人家可是大厨啊,我煮夫一个啊,但是口味绝对都一样好,酸酸甜甜,鲜嫩的鱼肉,真的很下饭,Vincent很爱吃的啊哈哈!
清人方恒泰有《西湖》诗咏之,云:"小泊湖边五柳居,当筵举网得鲜鱼。味酸最爱银刀桧,河鲤河鲂总不如。"道出了西湖醋鱼的烹制与美味。但现在平时做西湖醋鱼都用草鱼来做,同样鲜美啊哈哈!
